They’re the same dish under two names. Both layer tortillas instead of pasta sheets with a taco-seasoned meat filling and cheese. The only real variation between versions is the sauce — some use salsa or plain tomato sauce, and I prefer red enchilada sauce because it adds tang and keeps the tortilla layers from drying out in the air fryer’s circulating heat.
What Size Pan Fits in Your Air Fryer?
This is the part that trips people up, so get it sorted before you start layering.
- 5 to 6 quart basket air fryer: a 6- or 7-inch round cake pan or springform pan
- 8 quart basket: a 7- or 8-inch round pan
- Oven-style or toaster-oven air fryer: an 8×8 square pan usually fits, sometimes a 9×9
The pan needs about a half inch of clearance on all sides so air can move around it. If it’s a snug fit, the middle will still be cool when the top is browned. Whatever pan you use, grease it well — the cheese and enchilada sauce will weld themselves to bare metal.

How to Make Air Fryer Mexican Lasagna

Step One: Cook the filling. Brown the ground beef in a skillet over medium heat, breaking it up as it goes. Add the diced onion, minced garlic, taco seasoning, and green chilies, and cook until the onion is soft and the beef is cooked through. Drain the fat, then stir in the refried beans until everything is combined into a thick, spreadable mixture.

Step Two: Layer it. Preheat the air fryer to 350°F (175°C) for three to five minutes. Grease your pan well. Start with a tortilla on the bottom, spread on a thin layer of the beef mixture, add a handful of cheese, and drizzle with enchilada sauce. Repeat — tortilla, beef, cheese, sauce — until the pan is full or you run out. Finish with a tortilla topped with cheese and a spoonful of sauce. Keep the layers thin and even; thick layers of filling are the main reason the center stays cold.

Step Three: Air fry. Place the pan in the preheated basket and cook at 350°F (175°C) for 15 to 20 minutes, until the cheese is fully melted and bubbling at the edges. Yes. Assemble it exactly the same way in a 9×13 pan if you’re doubling the recipe, cover with foil, and bake at 375°F for 25 minutes. Uncover and bake another 10 minutes to brown the cheese. The air fryer version is faster and gives you crispier tortilla edges, but the oven is the better call if you’re feeding a crowd.
Storing, Freezing, and Reheating
Storing: Cool completely, then refrigerate in an airtight container for three to four days. It slices more cleanly cold than warm.
Freezing: Slice into portions, wrap each tightly in foil or plastic, and freeze in a bag or container for up to three months. Label it — frozen casserole wedges all look alike by month two.
Reheating: The air fryer is the best option here. Five to seven minutes at 350°F brings a refrigerated slice back to bubbling with the edges re-crisped. From frozen, cover with foil and air fry at 350°F for 15 to 18 minutes, uncovering for the last few. The oven works too — 375°F for about 10 minutes refrigerated, 20 to 25 from frozen.
What to Serve With It

Can I use store-bought tortillas?
Yes, and I always do. Just make sure they’re soft and pliable, and cut them to fit your pan. Six-inch tortillas need no trimming for most air fryer pans.
Flour or corn tortillas — which is better?
Flour tortillas hold together better and give you neater slices. Corn tortillas have more flavor and crisp up at the edges, but they’re more likely to crack when you cut into the finished lasagna. If you use corn, warm them briefly first so they flex instead of split.
Can I make this ahead of time?
Assemble it up to 24 hours in advance, cover tightly, and refrigerate. Add three to five minutes to the cook time since you’re starting cold.
Can I cook it directly in the air fryer basket?

Why is the middle still cold?
