Description

This easy air fryer caprese chicken is a fresh, healthy 30-minute dinner — juicy seasoned chicken breasts topped with melty fresh mozzarella, ripe tomato, fragrant basil, and a sweet balsamic glaze. Minimal prep, big Italian flavor, and the air fryer does the work.

Ingredients 

  • 2 boneless, skinless chicken breasts, (pounded to even thickness)
  • 2 teaspoons olive oil
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper, or to taste
  • ½ teaspoon Italian seasoning, optional
  • ¼ teaspoon garlic powder, optional
  • 2 large ripe tomatoes, sliced into 8 rounds
  • 4 slices fresh mozzarella, or bocconcini
  • ¼ cup fresh basil leaves
  • 2 teaspoons balsamic glaze

Instructions

  • Preheat the air fryer to 375°F (190°C).
  • Pat the chicken breasts dry and pound to an even thickness. Rub with olive oil and season both sides with salt, pepper, and (if using) Italian seasoning and garlic powder.
  • Place the chicken in the air fryer basket in a single layer. Cook for 15–18 minutes, flipping halfway, until the internal temperature reaches 165°F (74°C). Thinner breasts may finish closer to 12 minutes.
  • Top each breast with mozzarella and 2 tomato slices. Return to the air fryer for 2–3 minutes, until the cheese melts.
  • Drizzle with balsamic glaze and top with fresh basil leaves. Serve immediately.

Notes

  • Pounding the chicken to an even thickness is the key to juicy, evenly cooked breasts.
  • Keep the cheese toward the center so it melts onto the chicken instead of into the basket.
  • Store leftovers in an airtight container in the fridge for 2–3 days; reheat gently to avoid drying out.
  • For a stuffed version, slit or butterfly the breast and tuck the toppings inside before cooking.
