Crispy, salted skin and a fluffy floury middle — jacket potatoes made entirely in the air fryer, no oven required. Includes a microwave shortcut for busy nights.
Ingredients
4largefloury potatoes, Maris Piper, King Edward, or Russet, about 250–300g / 9–10 oz each
1tablespoonolive oil
1teaspoonflaky sea salt
Instructions
Preheat the air fryer to 400°F / 200°C for 3 minutes.
Scrub the potatoes well and dry them thoroughly with a towel.
Prick each potato 6–8 times all over with a fork.
Rub the oil into the skins with your hands, then sprinkle over the salt and press it in.
Place the potatoes in the basket in a single layer with space between them. Air fry at 400°F / 200°C for 40 minutes, turning each potato once at the halfway point.
Test with a skewer or knife through the thickest part — it should slide in with no resistance. If not, cook in 5-minute increments and check again.
Rest for 5 minutes. Cut a cross in the top, squeeze the ends inward to open, fluff with a fork, and add your toppings.
Microwave shortcut (about 20 minutes total): Prick the potatoes and microwave on high for 5 minutes per potato, turning halfway. Then oil, salt, and air fry at 400°F / 200°C for 10–15 minutes until crisp.Timing by size: Small (150g) 30–35 min · Medium (200–250g) 35–40 min · Large (300–350g) 45–50 min · Extra large (400g+) 55–60 min.Don't use foil.
