Description

This easy Air Fryer Jiffy Corn Casserole is creamy and custardy inside with a golden, crisp top — made with Jiffy mix and no sour cream. Just 5 minutes of prep for the perfect holiday or weeknight side.

Ingredients 

  • 2 tablespoons honey
  • 2 tablespoons granulated sugar
  • 1/2 cup salted butter, melted and cooled
  • 2/3 cup heavy cream
  • 2 large eggs, room temperature
  • 14.75 ounces cream-style sweet corn
  • 15.25 ounces whole kernel corn, drained
  • 8.5 ounces Jiffy Corn Muffin Mix
  • Optional: 1 cup shredded cheddar cheese

Instructions

  • In a large bowl, whisk together the honey, sugar, eggs, heavy cream, and melted butter until smooth.
  • Stir in the cream-style corn, drained whole kernel corn, and Jiffy mix until just combined. Fold in cheddar now, if using.
  • Grease a 7–8 inch pan that fits your air fryer basket, pour in the batter, and cover loosely with foil.
  • Air fry at 320°F. Begin checking at 35 minutes, then continue in 5-minute increments until the center is set with a slight jiggle and a toothpick comes out with moist crumbs — about 40–55 minutes total. Uncover for the last 5 minutes for a golden top.
  • Rest 5–10 minutes before slicing. Serve warm.
