Air Fryer Quiche Lorraine

Description

Air fryer quiche lorraine with a crisp, blind-baked crust and a silky bacon-and-Swiss custard. Ready in 25 minutes, with a full-size version included.

Ingredients 

  • 1 pie crust, 6-inch round pie crust dough, cut from refrigerated pie crust (about ⅓ crust)
  • ½ cup grated Swiss cheese, or Gruyère
  • 2 tablespoons cooked bacon crumbles
  • 1 large egg
  • 1 tablespoon heavy cream
  • teaspoon salt
  • teaspoon black pepper
  • teaspoon grated nutmeg, optional

Instructions

  • Remove the refrigerated pie crust from the fridge 15 minutes before starting.
  • Unroll the dough and set the tart pan on top. Cut a circle about 1 inch wider than the pan.
  • Press the crust into the pan, tucking the edges down the sides. Trim any excess so the crust is level with the rim.
  • Place the tart pan in the air fryer basket and cook at 300°F (150°C) for 5 minutes.
  • Sprinkle the cheese over the bottom of the crust, then scatter the bacon over the cheese.
  • Whisk the egg, cream, salt, pepper, and nutmeg until smooth, then whisk 15 seconds longer to add air.
  • Pour the custard slowly over the fillings, up to the top edge of the crust. Do not overfill.
  • Return to the air fryer and cook at 300°F (150°C) for 10 minutes, until the center reaches 165°F and wobbles slightly.
  • Rest 1–2 minutes, then push the quiche up out of the pan and slide a spatula under to release it.
  • Serve warm.

Notes

  • Full-size (7-inch, serves 4): 1 full pie crust round, 1 cup cheese, ½ cup bacon, 4 eggs, ¾ cup heavy cream, ½ teaspoon salt. Blind bake 8 minutes at 300°F, then cook 25–32 minutes at 300°F. Tent with foil if browning early.
  • Cheese goes under the bacon — it helps keep the base crisp.
  • Sauté onions before adding; raw onion won't cook through and releases water.
  • Don't dock the crust. It barely puffs in the air fryer, and the holes let custard leak.
  • Two 5-inch quiches fit in most baskets. The time doesn't change as long as they aren't touching.
  • Reheat at 300°F for 4–6 minutes.
