Description
Blistered, jammy cherry tomatoes roasted in the air fryer in 10 minutes with olive oil, salt, pepper, and Italian seasoning. No oven required.
Ingredients
1
pound
cherry tomatoes
,
washed and dried
2
tablespoons
olive oil
1
teaspoon
kosher salt
½
teaspoon
black pepper
1
teaspoon
Italian seasoning
Instructions
Wash the cherry tomatoes and pat them completely dry. Remove stems. Leave whole, or halve for deeper caramelization.
Add the tomatoes to a mixing bowl with the olive oil, salt, pepper, and Italian seasoning. Toss until evenly coated.
Spread in a single layer in the air fryer basket or tray. Do not overlap — cook in batches if needed. Halved tomatoes go cut side up.
Air fry at 400°F for 8 to 10 minutes (whole) or 6 to 8 minutes (halved). Check at 6 minutes. Done when skins split and edges brown.
Transfer to a bowl with all the juices. Top with fresh basil and serve warm.
Equipment
Air Fryer
Cooking Spray
Parchment Paper
Notes
Single layer is essential — crowding steams instead of roasts.
Dry the tomatoes well before seasoning.
Preheating is optional; 3 minutes at 400°F improves browning.
Line the basket with parchment to keep the juices.
Works in any model — basket, oven style, Ninja Foodi, Instant Pot Vortex, Cosori, GoWise, PowerXL. Times vary slightly by wattage.
Refrigerate up to 5 days or freeze up to 3 months.
