Description

Sweet, jammy, lightly charred air fryer roasted Roma tomatoes made with just olive oil, salt, pepper, and herbs. Ready in 20 minutes and perfect for pasta, bruschetta, soup, or an easy side dish.

Ingredients 

  • 4 Roma tomatoes, halved lengthwise
  • 1 tablespoon olive oil, or avocado oil
  • ½ teaspoon kosher salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon dried or fresh herbs, basil, oregano, thyme, optional
  • Optional: garlic powder or grated parmesan

Instructions

  • Wash the Roma tomatoes and pat them completely dry. Slice in half lengthwise (quarter any large ones).
  • In a bowl, toss the tomato halves with olive oil until lightly coated. Season with salt, pepper, and dried herbs if using.
  • Preheat the air fryer to 375°F (190°C).
  • Arrange the tomatoes cut-side up in a single layer in the basket, leaving space between them. Don't overcrowd.
  • Air fry at 375°F for about 15 minutes, until tender and lightly browned at the edges.
  • For a more charred, jammy texture, add 3–5 minutes, watching closely so they don't burn.
  • Rest a couple of minutes, then serve warm or cool for later use.

Notes

  • Cheesy twist: sprinkle parmesan over the tomatoes in the last few minutes (or try my full parmesan tomatoes recipe).
  • Spicy kick: add a pinch of red pepper flakes before roasting.
  • Air fryers vary — check at the 12-minute mark the first time you make these.
  • Serve as a side, or use in pasta, bruschetta, salads, soup, or sauce.
