Ingredients
3cupssweet potatoes, cooked and cooled
⅓cupunsalted butter, melted
½cupbrown sugar
1teaspoonvanilla extract
½cuppecans, diced
1teaspoonground cinnamon
1teaspoonkosher salt
½teaspoonblack pepper
1cupmini marshmallows
Instructions
In a large bowl, mash the cooked sweet potatoes with a fork or potato masher until smooth.
Add the melted butter, brown sugar, vanilla, cinnamon, salt, and pepper. Mix well, then fold in the diced pecans.
Lightly grease a casserole dish that fits your air fryer basket. Spread the mixture in evenly.
Top with the mini marshmallows.
Air fry at 320°F for 10–12 minutes, until the marshmallows are golden and the casserole is heated through.
