Description

Creamy air fryer sweet potato casserole with a golden, crispy pecan-and-marshmallow topping. The easy, oven-free holiday side dish that's ready in about 32 minutes.

Ingredients 

  • 3 cups sweet potatoes, cooked and cooled
  • cup unsalted butter, melted
  • ½ cup brown sugar
  • 1 teaspoon vanilla extract
  • ½ cup pecans, diced
  • 1 teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 cup mini marshmallows

Instructions

  • In a large bowl, mash the cooked sweet potatoes with a fork or potato masher until smooth.
  • Add the melted butter, brown sugar, vanilla, cinnamon, salt, and pepper. Mix well, then fold in the diced pecans.
  • Lightly grease a casserole dish that fits your air fryer basket. Spread the mixture in evenly.
  • Top with the mini marshmallows.
  • Air fry at 320°F for 10–12 minutes, until the marshmallows are golden and the casserole is heated through.
  • Serve warm and enjoy.
