Air Fryer White Chicken Chili Dip

Description

A warm, cheesy air fryer dip with the flavors of white chicken chili. Blended white beans add a healthy touch, while rotisserie chicken keeps it simple and quick to prepare!

Ingredients 

  • ½ tablespoon olive oil
  • 14.5 ounces white beans, drained and rinsed
  • ½ cup sour cream
  • 2 teaspoons minced garlic
  • 2 tablespoons fresh lime juice
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • 1 cup shredded rotisserie chicken
  • ½ cup frozen corn, thawed and patted dry
  • 2 tablespoons minced cilantro
  • 1 cup shredded mozzarella, divided
  • 1 cup shredded sharp cheddar cheese, divided
  • ½ cup diced red bell pepper
  • cup salsa verde
  • 2 tablespoons fresh parsley or cilantro, for serving

Instructions

  • Brush a 6- to 7-inch cast iron skillet or air fryer–safe pan with the olive oil.
  • Reserve ½ cup of the white beans. Add the remaining beans, sour cream, garlic, lime juice, cumin, and salt to a food processor or blender. Blend 60 to 90 seconds, until completely smooth, then transfer to a large bowl.
  • Stir in the chicken, corn, cilantro, and half of the mozzarella and cheddar. Mix well.
  • Scatter the reserved beans, red bell pepper, and salsa verde in the bottom of the prepared pan. Spoon the blended mixture on top and smooth the surface.
  • Air fry at 320°F for 8 to 12 minutes, until the edges are bubbling.
  • Top with the remaining cheese and air fry 3 to 4 minutes more, until melted and golden.
  • Rest 5 minutes, garnish with parsley or cilantro, and serve warm.

Notes

Oven method: bake at 375°F for 20 to 25 minutes, add cheese, then broil 2 to 3 minutes. Make ahead: assemble without the top cheese layer up to 24 hours in advance and add 3 to 5 minutes to the cook time.
