Silky, steakhouse-style creamed spinach made the real way — blanched and puréed spinach folded into a butter-and-flour roux and finished with fresh nutmeg.
Ingredients
2poundsfresh spinach, stems removed
6tablespoonsbutter, divided
3tablespoonsall-purpose flour
2cupswhole milk
½smallyellow onion, grated
1bay leaf
¼teaspoonnutmeg, freshly grated
1teaspoonkosher salt, plus more to taste
¼teaspoonblack pepper
Instructions
Bring a large pot of salted water to a boil and prepare a large bowl of ice water. Blanch the spinach for 45 seconds to 1 minute, until just wilted and bright green. Transfer immediately to the ice water.
Drain the spinach and squeeze it dry in handfuls, then wrap in a clean kitchen towel and wring out any remaining liquid.
Pulse the spinach in a food processor until finely puréed. Set aside.
Melt 4 tablespoons of the butter in a saucepan over medium-low heat. Whisk in the flour and cook, whisking constantly, for 1 minute — it should bubble but not brown.
Add the grated onion, bay leaf, salt, and pepper. Cook 2 minutes, stirring.
Pour in the milk in a slow, steady stream while whisking constantly. Continue whisking 5 to 7 minutes until thickened enough to coat the back of a spoon.
Remove the bay leaf. Stir in the spinach purée and cook over low heat 5 minutes, until hot and glossy.
Off the heat, stir in the nutmeg and the remaining 2 tablespoons softened butter. Taste, adjust salt, and serve hot.

Squeeze the spinach harder than you think you need to — trapped water is the only thing that ruins this dish. For frozen spinach, substitute 20 ounces thawed chopped spinach and skip steps 1 and 2.
