Description

A 5-minute copycat Ruth's Chris steak seasoning made with 7 pantry spices. Salt-forward, garlicky, and sugar-free so it won't burn under high heat

Ingredients 

  • 3 tablespoons kosher salt
  • 2 tablespoons coarsely ground black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon sweet paprika
  • 2 teaspoons dried parsley
  • ½ teaspoon cayenne pepper

Instructions

  • Add the kosher salt, black pepper, garlic powder, onion powder, paprika, dried parsley, and cayenne to a small bowl.
  • Whisk thoroughly for a full minute, until the blend is evenly colored with no clumps of garlic or onion powder settled at the bottom.
  • Transfer to an airtight jar and store in a cool, dark place for up to 6 months.

Notes

  • How much to use: about 1 teaspoon per side on a 1-inch steak. It looks like too much, but a good amount ends up in the pan rather than on the meat.
  • When to season: salt either 40+ minutes before cooking or immediately before — never in the window between, when the surface is wet and the steak will steam instead of sear.
  • Pat the steak dry first. Dry surface, better crust.
  • No sugar, by design. Brown sugar in store-bought steakhouse blends scorches under high heat. This one can handle a hard sear.
  • Salt-free version: leave the salt out entirely and salt your steak separately for better timing control.
  • The steakhouse finish: heat dinner plates at 400°F for 10 minutes. Mash ½ teaspoon of this blend and 1 teaspoon chopped parsley into 4 tablespoons softened butter, put the butter on the hot plate, and set the rested steak on top so it sizzles at the table.
  • Fine salt substitution: reduce to 2 tablespoons or the blend will be far too salty.
