Pat the chicken cutlets completely dry. Rub with olive oil, then season both sides with Italian seasoning, garlic powder, paprika, salt, and pepper.
Preheat the air fryer to 380°F. Place the chicken in a single layer in the basket, leaving space between pieces. Cook 10 to 14 minutes, flipping halfway, until the internal temperature reaches 165°F. Work in batches if needed.
While the chicken cooks, melt the butter in a skillet over medium heat. Add the garlic and sun-dried tomatoes and cook 1 minute, until fragrant.
Pour in the chicken broth and simmer 2 minutes to reduce slightly.
Stir in the heavy cream, Parmesan, Italian seasoning, and red pepper flakes. Simmer gently 2 to 3 minutes, stirring, until the sauce coats the back of a spoon. Do not let it boil hard.
Add the spinach and stir until wilted, about 1 minute. Season with salt and pepper to taste.
Rest the chicken 5 minutes, then plate and spoon the sauce over the top. Finish with extra Parmesan and fresh basil.
