Description

Crispy air fryer cannellini beans made from one can of white beans, a little olive oil, and whatever seasoning you like. Ready in 15 minutes, with the drying step that actually makes them crunch.

Ingredients 

  • 15 ounces canned cannellini beans, drained and rinsed
  • 2 teaspoons olive oil
  • 1 teaspoon seasoning of choice, smoked paprika, garlic powder, ranch, or salt and pepper

Instructions

  • Drain the cannellini beans in a colander and rinse under cold water until the water runs clear.
  • Spread the beans in a single layer on a clean kitchen towel or paper towels. Pat the tops dry and let them sit for 10 minutes.
  • Transfer the dried beans to a bowl and toss with the olive oil until lightly coated. Hold the seasoning until after cooking.
  • Spread the beans in a single layer in the air fryer basket. Air fry at 400°F for 12 to 15 minutes, shaking every 4 to 5 minutes, until golden, wrinkled, and rattling in the basket.
  • Toss the hot beans with your seasoning immediately, then let them cool 5 minutes before serving — they crisp further as they cool.

Notes

  • Drying is the step that determines whether these work. Do not shorten it.
  • Remove the crisper plate if the holes are wide enough for beans to fall through.
  • Add garlic powder, spice blends, and fresh aromatics after cooking; they scorch at 400°F.
  • Store at room temperature with the lid ajar for up to 2 days. Re-crisp at 375°F for 2 to 3 minutes.
  • Do not double the batch — a single layer is required.
