Ingredients
Baked Oatmeal
1cuprolled oats
¼cupbrown sugar, or coconut sugar
1teaspoonground cinnamon
½teaspoonbaking powder
¼teaspoonsalt
¾cupmilk, any type
1largeegg
1teaspoonpure vanilla extract
Cinnamon Swirl
3tablespoonsalmond butter, or regular butter
1tablespoonmaple syrup
½teaspoonground cinnamon
1tablespoonhot water
Topping
2tablespoonsGreek yogurt
⅛cuppecans, diced
Instructions
In a medium bowl, stir together the rolled oats, brown sugar, cinnamon, baking powder, and salt. Mix in the milk, egg, and vanilla just until combined.
Divide the mixture evenly among 3 ramekins. Air fry at 320°F (160°C) for 8–10 minutes, until the tops are golden. Let cool 5 minutes before topping.
Make the swirl: whisk the almond butter, maple syrup, cinnamon, and hot water until smooth. Transfer to a squeeze bottle and swirl over each ramekin.
Add a swirl of Greek yogurt, then top with chopped pecans. Serve warm.
