Every party dip recipe out there tells you to preheat the oven. This one doesn’t. This Nashville hot chicken dip is creamy, fiery, and completely no-bake — the base comes together in the microwave, the crispy popcorn chicken goes on top, and the whole thing is on the table in about 15 minutes.

That crispy topping is the whole point. Most Nashville hot chicken dips bake everything together, which means the chicken goes soft. Here, the creamy cayenne-and-buttermilk base stays separate from the crunchy chicken until the moment you serve it, so every scoop gets both textures — exactly the way a real hot chicken sandwich works.
Grab something sturdy to scoop with. You’re going to need plenty.

What Makes It “Nashville Hot”
Nashville hot chicken traces back to Prince’s Hot Chicken in North Nashville, where fried chicken gets brushed with a paste of cayenne, brown sugar, and hot frying oil, then served on plain white bread with dill pickle chips on top. The bread and pickles aren’t garnish — they exist to cut the heat.
That’s why this dip has honey (the sweetness that balances cayenne), buttermilk (the tang), and pickles on top (the cooling crunch). Skip the pickles and you’ve just made a spicy chicken dip. Keep them and you’ve made a Nashville one.
If you want the full fried version, my Nashville hot chicken nuggets walk through the classic cayenne-and-honey glaze.
Why You’ll Love This Recipe
- No oven, no bake. The microwave does the only cooking. Your kitchen stays cool, and your oven stays free for whatever else you’re serving.
- Fifteen minutes, start to finish. Genuinely — there’s no bake time to wait out.
- The chicken stays crispy. Because it’s added at the end, not stirred in and baked.
- You control the heat. Cayenne and Frank’s are both adjustable. Dial it to your crowd.
- The base is make-ahead friendly. Mix it up to two days early, then top and serve.
- It’s a genuine crowd-pleaser. This is the bowl that gets scraped clean before the wings are gone.
Ingredients Needed

For the dip base:
- Cream cheese — the rich, creamy foundation. Room temperature is essential; cold cream cheese will stay lumpy no matter how long you beat it.
- Buttermilk — adds the tang that makes this taste Southern, and thins the base to a scoopable consistency.
- Honey — the sweet counterweight to the cayenne. Don’t skip it.
- Garlic powder — savory depth throughout.
- Cayenne pepper — the heat engine. Start conservative; you can always add.
- Frank’s RedHot — bright, vinegary heat that plays against the cream cheese.
For the topping:
- Popcorn chicken — crispy bites that hold up. Homemade air fryer popcorn chicken is best here because it comes out crunchier and less greasy than frozen.
- Cayenne, honey, and Frank’s — whisked into a finishing drizzle, exactly like the sauce brushed onto real hot chicken.
- Pickle slices — non-negotiable. The tang is what makes it Nashville.
- Chopped scallions — freshness and color.
How To Make Nashville Hot Chicken Dip

Step One: Add the cream cheese and buttermilk to a large microwave-safe bowl and heat for 1 minute. Beat with a hand mixer until completely smooth. If it’s still thick, microwave another 30 seconds and beat again.

Step Two: Mix in the honey, garlic powder, cayenne, and Frank’s RedHot. Beat until fully combined, then fold in 1 cup of the chopped popcorn chicken.
Step Three: In a small bowl, whisk together the remaining cayenne, honey, and Frank’s to make the finishing sauce.
Step Four: Transfer the dip to a serving bowl (or leave it in the bowl you mixed it in). Pile the remaining crispy chicken in the center, drizzle the sauce over the top, and finish with pickle slices and scallions. Serve right away, while the chicken is still crisp.

Recipe Tips
- Room-temperature cream cheese is not optional. Pull it out an hour ahead. It’s the single biggest factor in whether your dip is silky or lumpy.
- Crisp your chicken right before serving. Even store-bought popcorn chicken benefits from 3–4 minutes in the air fryer at 400°F. Soggy topping is the only way this recipe goes wrong.
- Add cayenne in stages. Taste after each addition. Cream cheese mutes heat at first and then it creeps up on you.
- Don’t stir the topping in. Keeping it on top is what separates this from every baked version.
- Warm the honey for 10 seconds before whisking the finishing sauce — it drizzles much more evenly.
Variations
- Want it baked? Stir all the chicken into the base, spread it in an 8×8 dish, top with a cup of shredded cheddar or pepper jack, and bake at 350°F for 20 minutes. Add the pickles, scallions, and drizzle after it comes out.
- Use shredded chicken instead. Rotisserie or leftover chicken works — you’ll lose the crunch, so add crushed kettle chips on top.
- Make it cheesier. Fold a cup of shredded pepper jack into the warm base.
- Turn down the heat. Cut the cayenne to ½ teaspoon and the Frank’s to 2 tablespoons. The honey and buttermilk carry plenty of flavor on their own.
- Add smoke. A teaspoon of smoked paprika gets you closer to that fried-in-cast-iron flavor.
- Bacon. Crumbled crisp bacon on top is never a mistake.

What To Serve With It
Sturdy dippers matter here — this is a thick dip and flimsy chips snap. My favorites:
- Thick-cut tortilla chips or homemade air fryer tortilla chips
- Ritz or club crackers
- Soft pretzel bites
- Celery and carrot sticks
- Waffle fries — surprisingly excellent
- Air fryer cheddar ranch pickle chips if you want to double down on the pickle angle
Building out a full spread? This sits beautifully next to slow cooker beer cheese dip and air fryer artichoke dip — one spicy, one savory, one creamy covers just about everybody.

Storing Instructions
- Refrigerate: Store leftovers in an airtight container for 3–4 days. Keep the chicken separate if you can — it softens overnight in the dip.
- Reheat: Warm the base gently in the microwave in 30-second bursts, stirring between each. Re-crisp the chicken in the air fryer for 3 minutes and re-top.
- Make ahead: The base can be made up to 2 days in advance. Let it come to room temperature for 20 minutes before serving, then add the topping.
- Don’t freeze it. Cream cheese separates and turns grainy when thawed.
Recipe FAQs
Do I have to bake this dip? No. This is a fully no-bake recipe — the microwave softens the cream cheese and that’s the only heat involved. If you’d prefer a hot, bubbly version, see the baked variation above.
Can I make it ahead of time? Yes. Make the creamy base up to two days early and refrigerate it. Add the popcorn chicken, drizzle, pickles, and scallions right before serving so the topping stays crisp.
Can I use rotisserie or shredded chicken? Absolutely. Chop it into bite-sized pieces and fold it in. You’ll trade the crunch for convenience, so consider adding crushed potato chips on top.
How spicy is it? Medium-hot as written. Two teaspoons of cayenne plus ¼ cup of Frank’s has real heat, but the cream cheese and honey soften it considerably. Halve both if you’re feeding a mixed crowd.
Can I use a different hot sauce? Yes. Frank’s gives it a Buffalo-leaning tang; Texas Pete or Cholula both work well and read a little more Southern.
Why is my dip lumpy? Cold cream cheese. Microwave for another 30 seconds and beat again with a hand mixer — it will smooth out.
Can I make it dairy-free? You can substitute dairy-free cream cheese and unsweetened plant milk with a teaspoon of lemon juice in place of the buttermilk. The texture will be looser and the flavor less tangy.
Can I keep it warm for a party? Yes — the base holds well in a small slow cooker on the “warm” setting. Add the crispy topping right before guests arrive, not at the start.
