Step One: Preheat. Set your air fryer to 400°F (200°C) and let it run for 3 to 5 minutes. Dropping frozen wedges into a cold basket is the number one reason people end up with limp results — the wedges sit and sweat while the machine warms up.

Step Two: Arrange in a single layer. Spread the frozen wedges across the basket with a little space between them. Cook in two batches rather than piling them up. Crowding is the difference between roasting and steaming.

Step Three: Spray lightly with oil. A quick pass of olive or avocado oil spray. You don’t need much — the wedges already contain oil from the factory par-fry. This just accelerates browning.

  • Preheat every time. It’s three minutes and it’s the single biggest factor.
  • Never crowd the basket. Two batches of crispy wedges beat one batch of soft ones.
  • Pat off frost. If the bag has been open a while and the wedges are frosty, blot them with a paper towel before spraying with oil.
  • Shake, don’t stir. Shaking tumbles the wedges and lets them land on new faces; stirring with a utensil breaks the crust.
  • Add cheese at the end. Parmesan, cheddar, anything meltable goes on in the last 2 minutes, not at the start, or it burns.

Most bagged wedges are seasoned already, so taste first. If you want to build on them, toss the hot wedges with any of these:

  • Steakhouse: garlic powder, onion powder, smoked paprika, black pepper
  • Garlic parmesan: grated parmesan, garlic powder, chopped parsley
  • Cajun: paprika, cayenne, oregano, thyme, white pepper
  • Ranch: dry ranch seasoning packet, added straight out of the basket
  • Loaded: shredded cheddar and crumbled bacon, melted for the final 2 minutes

How to Store and Reheat

  • Storing: Cool leftover wedges completely, then refrigerate in an airtight container for up to 3 days. They will soften in the fridge — that’s normal and fixable.
  • Reheating: Do not microwave them. Air fry at 380°F for 4 to 6 minutes, shaking once. They come back almost as crisp as the first round. Leftover wedges reheat better than almost any other frozen potato product because of how thick they are.
  • Freezing cooked wedges: Not recommended. Cook only what you plan to eat and leave the rest in the bag.

Do I need to thaw frozen potato wedges before air frying? No — and you shouldn’t. Cook them straight from the freezer. Thawing draws moisture to the surface and makes the wedges soggy instead of crisp.

Do I have to preheat the air fryer? It’s optional but strongly recommended. Preheating for 3 to 5 minutes at 400°F gives you noticeably crispier wedges and shaves a couple minutes off the cook time.

Can I use parchment paper or a liner? Yes, but only with the air fryer already preheated and the wedges holding the paper down. Loose parchment can lift into the heating element. A liner also blocks airflow from below, so expect slightly less crisping.

Why aren’t my wedges crispy? Almost always one of three things: the basket was overcrowded, the air fryer wasn’t preheated, or the wedges were thawed. Fix those and the results change dramatically.

Can I cook these in an air fryer oven or Ninja Foodi? Yes. Use the same temperature and time, spread the wedges on the tray in a single layer, and rotate the tray halfway through if your model has hot spots.
