How to Make Copycat White Castle Sliders in the Air Fryer

Step 1 — Rehydrate the onions. Combine the dried minced onion with the water or broth in a small bowl. Let it sit 10 minutes, until the onions plump up and most of the liquid is absorbed. Don’t drain it.

Step 2 — Season and press the beef. Mix the garlic powder, onion powder, salt, and pepper into the ground beef with your hands — gently, just until combined. Overworking makes the patties tough. Line a small pan or air fryer–safe dish with parchment and press the beef into an even rectangle about ¼ inch thick, roughly the size of your basket.

Step 3 — Score and poke. Using a knife or bench scraper, score the beef into 12 squares (don’t cut all the way through yet). Then poke 5 holes in each square with the end of a chopstick or a drinking straw — four corners and one center.

Step 4 — Build the onion bed. Spread the rehydrated onions and their liquid in an even layer in the bottom of your parchment-lined air fryer pan. Carefully lay the beef sheet directly on top of the onions.

Step 5 — Air fry. Cook at 375°F for 8–10 minutes, until the beef is cooked through and reaches an internal temperature of 160°F. There’s no flipping — the steam does the work.

Step 6 — Add the cheese. Lay the half-slices of American cheese over the beef, close the basket, and cook 1 more minute until melted.

Step 7 — Steam the buns. Set the bun bottoms directly on top of the cheese and beef, close the air fryer, and let them sit in the residual heat for 1–2 minutes. This is what gives them that unmistakable steamed-bun texture.

Step 8 — Cut and assemble. Slide the whole thing out, cut through your scored lines into 12 squares, and stack: bottom bun, patty with onions clinging to it, pickles, top bun. Serve immediately.

Tips for the Best Copycat Sliders

  • Press the beef thinner than feels right. ¼ inch looks too thin raw and comes out perfect. Thick patties turn these into regular mini burgers.
  • Don’t skip the holes. Without them the center steams unevenly and the patties puff up.
  • Work in batches if your basket is small. Most 4–6 qt air fryers will fit about 6 sliders’ worth at a time. Cook in two rounds rather than crowding.
  • Keep the onion liquid. That liquid becoming steam is the entire mechanism here. If it evaporates in the first few minutes, add a tablespoon more water.
